I hVe my earplugs in my iPod touch and it's playing through the headphones AND the iPod speakers outloud. I just want it to play through my headphones.

I have the same problem, I read that insomnia can cause it. Uninstall, and reboot the iPod. I'm going to try it when I get home, it worked perfectly up untipod music speakeril earlier today.
try taking the headphones and then putting them back in... and if that doesn't work... then... i dont know
